About us

After knowing each other and working together for many years, it was around a bonfire in the forest one winter evening that we decided to build something together. A dream we’d all held onto for a long time finally became more than just talk.

The three of us know each other from our time at Kontrast, and each of us brings our own track records: Kontrast, Hyde, Maaemo, The Fat Duck, L’Enclume, Helene Darroze, The Square, The Gordon Ramsay Group and several hotels. Sabotage is our first step as owners of our own restaurant. It couldn’t have happened in a better place.

Old meets new

The address already has a place in Oslo’s restaurant history — several well-regarded restaurants have previously called the space at Rosteds gate 15B home. Now we’re putting our own stamp on the room: a menu that moves between French finesse, Polish hospitality and Norwegian produce, brought together in a seasonal menu.

Serious food, relaxed atmosphere

Our goal is to challenge what people expect from fine dining. No stiff white tablecloths or strained waiter formality here! Instead, laughter, conversation with guests, and a genuine joy in the work that we hope carries straight through to the plate.

The menu is seasonal and fresh, and a good deal of it we forage and harvest ourselves. It’s the same pride in fine craftsmanship we’ve carried with us from the Michelin kitchens — just wrapped in a far more relaxed atmosphere.
